I LOVE almond cookies.  I kept trying to find a recipe for one's without wheat so I decided to combine a few and this has quickly become a favorite.  Enjoy!



PS - These are technically sugar free but the maple syrup or sucanat to the immune system is still sugar so I didn't feel right saying sugar free too.




Wet ingredients

1/3 cup melted coconut oil (this is very easy to melt, warm the pan and it will melt on it's own quickly.)
5 tablespoons maple syrup (you can use agave nectar but it doesn't come out quite the same); you can also use Sucanat for a similiar flavor, make it 6 tablespoons though and add tablespoons water.
1 tablespoon vanilla extract


Dry ingredients


2 3/4 cups (10 ounces) unblanched almond flour
1/4 tsp salt
1/2 tsp baking soda
1 tsp cinnamon




Mix together all of the wet ingredients in a large bowl.


Then add all of the dry ingredients.


Chill the dough for 2 hours in the refridgerator.


Roll dough to about 1/4 inch or a little thicker.  If you haven't done this before the easiest way is to put the dough between two pieces of wax paper and roll.

Take off the top sheet, and cut whatever shape you want, I like to use various holiday ornaments but sometimes I make circular one's with a glass.

Place them on a cookie sheet oiled with coconut oil.

Bake at 350 degrees until brown at the edges.  The browner the crunchier.


Let them cool and enjoy!
